chefs200pxJoel and Mary Schaefer are glad you could join them and view their website. Our goal is to help the food service industry enhance their knowledge, skills, and ability in handling the increase in requests for preparing meals for customers with food allergies and intolerances.

While working at Walt Disney World Resort for 11 years, we have had the opportunity to refine our skills in preparing alternative menu items eliminating many of the top 8 food allergens which are egg, milk, peanuts, tree nuts, fish, shellfish, soy, and wheat.

We have participated in various events, notably the Gluten-Free Culinary Summit since 2006.

A Food allergy is an immune system response to a food protein. 90% of all food allergy reactions are caused by egg, milk, peanuts, tree nuts, fish, shellfish, soy, and wheat.
